Do you ever get a craving for  certain terrain? A certain place? I have been craving the mountains like crazy. Maybe it’s the 100+ temps…the early but still  ridiculously humid runs,the wave and lethargy of heat. 

Colorado mountains are good….

…so are the Tetons. (Do you know what that literally means??) I was watching a show on ultra marathoners a while ago and they were running in the mountains of Europe-maybe the Alps. The narrator said: “man goes to the mountains to find himself. Man sees his infinite smallness when compared to the infinite greatness.” For some reason it resonated with me, enough that I wrote it down to think about later. Running in the mountains certainly gives a sense of what you are made of. There is a crispness, a clear cut definition to mountains. Maybe I’m wanting mental clarity as much as the refreshing coolness.

Speaking of coolness…here a few cool summer eats. Tzatziki and caprese salad. 

I always make tzatziki with Greek yogurt, not sour cream. Garlic, tons of grated cucumber (fresh from a garden is best!), wild mint, a squeeze of lemon juice, salt and pepper, and chunks of feta. Good by itself, as a dip for veggies, on top of meats or salads.

Capri salads with fresh tomatoes, fresh mozzarella, and fresh basil (fresh, is obviously one of the best keys to cool summer foods). Drizzled with a little balsamic vinegar. The perfect summer meal.
