Birthdays are so fun. I’m a big believer in celebrating life and making a fuss over someone. Some people hate it and I do not understand. So what if you’re a year older. Not celebrating the passing of a year doesn’t stop the next year from coming on, so why not have a little fun with it along the way?
Cake for one is perfect for giving away, or making for yourself any day of the year to celebrate life, and beauty, and anything wonderful that needs to be celebrated. It is the perfect size, maybe 1 or 2 servings worth, and not a lot of leftover for the easily tempted or one who hates having leftovers (who are you people, by the bye, who dislike leftovers? I can honestly say, I just don’t get it. No offense).
1/4 cup all purpose flour
1 tablespoon cocoa powder
1/4 cup granulated sugar
1/4 teaspoon salt
1/4 teaspoon baking soda
1 large egg
2 tablespoons sour cream
1/4 teaspoon pure vanilla extract
1/4 cup semi sweet chocolate chips
1. Preheat oven to 350 degrees F. and spary pan with non stick cooking spray.
2. Place flour, cocoa, sugar, salt, baking soda, egg, sour cream, and vanilla into a large mixing bowl. Melt chocolate chips in a microwave safe bowl in 30 second intervals until smooth. Pour into bowl and mix all ingredients until well combined.
3. Pour batter into prepared can and bake for 25-30 minutes or until baked through. Remove and loosen edges with a knife. Let cool for 10 minutes then remove from can by flipping over firmly. Let cool completely, then frost with preferred icing and decorate with sprinkles.
