Sleep is one of the most delicious things there is, I’ve decided. I decided it as I slept in this morning, as I took a nap outside this afternoon, and I will realize it again when I go to bed tonight. Although, the downside to sleeping in late was running in the heat. I’m talking 80 degrees at 9 in the morning. It was a little rough, but definitely worth it.
I remember waking up late one morning in high school on a Saturday and realizing I had no plans for the day, and it was super depressing to me. I thought, I am completely planless. This morning I woke up, realized the same thing-that I was fairly planless for the day-and thought, this is awesome! And it has been so nice.
So curry, two ways. To me, the addition of basil to curry makes it thai. Whether that is accurate or not, I don’t really know. First up, curried chicken salad. To do this, just put some shredded chicken, cut up basil, curry, cumin, ginger, cinnamon (teeny bit), and some yogurt for moisture in a plastic bag.
Proceed with mashing. I love it plain, or on top of some fresh spinach.
Curry use #2: curried tofu. I had some leftover tofu after making a pie with it and decided to flavor it with curry, cucumbers, and basil.People act sometimes like tofu is a scary, nebulous thing. I guess if you chose to eat it plain it might be kind of scary. Tofu is a bland sponge that will soak up whatever you choose to flavor it with, whether it is savory or sweet.This would have been better with tomatoes, but I didn’t have any. It worked as is.
