figlet balls

I know…what a crazy name for a little dessert. I couldn’t think of what else to call them though-just a bunch of random little things mashed together into a ball and then rolled around in crushed nuts. I think figs are some of the most beautiful fruits though. Easiest recipe ever: you blend a few ingredients in the food processor. Roll into balls, and roll around in crushed nuts. Drizzle with honey. Pop in mouth and savor a snack that only has natural sugars, lots of healthy fats, and all that other heart healthy stuff:)

15 dried figs, chopped

3 small-medium carrots, grated

splash of vanilla and lemon juice

pinch of salt

1 cup oats

1/2 cup walnuts

honey for drizzling

This particular recipe made 18 little balls, although they weren’t uniform in size. If they are too crumbly, try adding a little more carrot and fig. I dare you to only eat 1.
