A significant motivation for baking sometimes comes, not from a homemaker’s desire, not from the need to create, not from the need to fill the kitchen with luscious smells…no sometimes it comes from a much more practical corner. You know, that corner on the counter where the bananas sneakily ripen faster than you can eat them?So I baked banana peanut butter muffins. Not the most original thing, maybe, but a delicious classic. And I added a little chocolate kiss in the middle to enhance the pb-banana combo. Don’t get me wrong…baking for all those other reasons are wonderful motivations. I spent a great deal of time in the kitchen today just for the joy of sinking my hands into yeasty foccacia dough, hearing squish as I mixed meatloaf, enjoying the sweet-savory aroma of caramelizing onions. These little (actually, they were huge. Ginormous.) muffins were aesthetically pleasing and delicious to taste. But let’s be honest, they were one royal excuse to clean off the counter.
Peanut butter banana muffins with a chocolate kiss
2 1/2 cups flour
1 tsp/ baking soda
1/4 tsp. salt
5 mashed bananas
1 cup sugar (I did 1/2 Splenda, 1/2 fake brown sugar)
1 tsp. vanilla
1/2 cup creamy peanut butter
12 chocolate kisses
Whisk the dry ingredients, mix until smooth the banana, sugar, vanilla, and peanut butter. Mix the dry into the wet and pour into oiled muffin tins. Place the kisses down into the middle. Bake at 350 for 30-35 minutes.
