Lots of people think kale is only good when it is cooked. False! It is delicious raw-in fact, it actually has more flavor and bite when it hasn’t been cooked. I made a simple salad with it today-with ingredients all from the garden: kale, tomato (nothing is better than a home grown tomato), and cucumber.Simply dressed with a little pepper, a drizzle of balsamic, and a sprinkle of Splenda. Deeelish.Kale is also fantastic roasted-into a little chip, if you will.This was actually part of a smorgasbord of last night’s dinner…When we clean out the fridge, we mean it. I brought some pizza and appetizers leftover from work, fresh tomatoes, chicken fried steak, jambalaya rice…never a dull moment at the Peiser table.The last of the garden veggies has come: peppers, beets, eggplant. *Tear.*
