Guest Post: Vegetarian Dinner

Vegetarian Meals=Creativity. There are so many ways to attain a healthy level of protein intake without eating meat. Dinner tonight consisted of broiled (a delightful oven tool that is all too often, and rather unfortunately, overlooked) carrots, tomatoes, eggplant, black beans, and feta cheese. There was also an okra that did not make the photo shoot, because I couldn’t resist the crispy, green goodness. It was a simple meal oozing with flavor. After broiling the carrots, tomatoes, and eggplant until they were tender, I topped the eggplant with black beans and feta. Browned feta is ideal. Stringy cheese resembles a spiderweb and should be avoided. To add a little contrast to the crunchy veggies, I dashed some flaxseed oil and balsamic vinegar on the tomatoes. Cumin. Paprika. Salt. Perfection.

The dessert that followed trumps the traditional banana split. I melted almond butter, cut a banana, mixed the two, drizzled chocolate, plopped a dollop of cool whip, placed in the freezer, and thoroughly enjoyed every sweet bite.
