The life aspiration of peanut butter may be completely fulfilled by being made into a cookie. There are many wonderful things along the way that pb can accomplish..being enjoyed by the spoonful, for instance, or on top of toast with a smathering of fruit preserves, used in sauce for Asian chicken. But in the cookie there is something wonderfully different than those other things. A peanut butter cookie transcends all those other things, reaching to new levels when it is the primary ingredient in a baked good.And what could improve upon a crumbly, melt-in-your-mouth, smooth flavor cookie? Chocolate and peanut butter are a nice combo, but that is kind of predictable. So instead I used white chocolate. I’m not claiming it as being remotely original, but at least it is a little different than the norm. Something about white chocolate is rich and decadent, more so than regular chocolate. Is it very very not good for you? Of course not, but then again, who eats a cookie because it is very very good for you anyway? Sure, you can healthify cookies (I do it all the time) but let’s just be honest and admit that inherently, cookies aren’t health food. And with all the awesome nutritional benefits of peanut butter, that has to offset the white chocolate. Just a little. Pretend for you sake and mine.
