I went on a baking binge today. Sometimes, when I don’t get enough opportunity to bake in my life, I just go all out and bake up a storm, even if there isn’t a good reason. I’m happy to report that all my baking today had a purpose, so there is not food wasting away somewhere. As if that could possibly happen in my house.I finished the cupcakes for my Grandmama, who we visited today. Every time I told her it was her birthday, she would laugh, as if it was the craziest, funniest thing in the world. She loved her cupcakes though and blew out all the candles, with a little help.In between bouts of baking (finished products to be shown later) and roasting outside for a little sunny Sunday afternoon nap, I had a fast lunch. Fast, but still healthy and easy peesy. Mango, bell pepper, and romaine salad for a little cold crunch, then frozen broc, fresh spinach, ricotta, and goat cheese zapped in the microwave for a warm and soft hit of protein and iron. Easy, fast, delicious.
