Whenever I see this recipe in my mom’s recipe book I envision little old ladies sitting around in flowered dresses, sipping pink lemonade and water out of crystal goblets, eating dainty bites of food-chicken salad on a lettuce leaf, fruit salad with mint leaves, and tiny quiches.This tart is not like that. Men eat this tart. They eat it and love it and are completely satisfied by it. I’m not trying to convince you to eat and make this (even though you should!) But I am telling you this: even though your grandmother would love it, it is filling enough for a men.
It is full of spinach, yogurt, feta, Parmesan, eggs, and dotted with olive oil-drizzled tomatoes. It might look like a quiche but it is beast of a meal. Especially when it is baked into a homemade crust that is flaky and melts like butter in your mouth.It doesn’t get better or easier than this. It is perfect for any meal: breakfast, lunch, dinner, general noshing. It is as good hot out of the oven as it is straight out of the fridge. Yuuuum.
