The perfect way to enjoy the (semi) ending to a rough day when it is pounding rain-made all the more loud by the presence of sky-lights, thunder is rumbling, and lightning flashes every few seconds?
Make a delicious dinner, put it on a lovely plate, and savor the rain! For dinner I made some roasted baby zucchini (wonderfully charred and soft) in the oven that was sprinkled with garlic salt and thyme, then topped with the best cheese ever: tangy, creamy goat cheese and a smattering of fresh basil. Goat cheese is best when paired with roasted things, and this zucchini was no exception. The cheese is already soft, but when it hits the warm veggies, it melts eve more and it’s sweetness comes through. For haters of goat cheese, it’s actually a lot like cream cheese, or feta. I’ve been making kids’ lunches and I’ve put it with crackers, on bagels, and with muffins and they have no idea it isn’t cream cheese. (They like goat cheese anyway, so I’m not fooling them too too much). Goat cheese is just one of several reasons I want a goat. I fell in love with goats when I was 14 and visited a petting zoo in Florida that had baby goats. You know how kids want a puppy, or a kitten? That is how much I wanted (and still do, one day, want) a baby goat. It’s like a cow, but better. You get milk (and all the byproducts, such as cheese) but you still get to cuddle with it and take it on walks. You can’t tell me they aren’t adorable.
