Calm after the storm

It was so quiet and still today compared to yesterday’s windstorm that it was a little weird. As in, where is the rushing wind and the crash of leaves and dust particles into my eyes? I know I talk about the weather a lot…maybe I missed my calling in life and should be a weatherwoman. Or not.

I was at the grocery store today and saw a head of cabbage and was inspired, so I made stuffed cabbage for dinner. The cabbage rolls didn’t cook as long as they needed to be really fork tender soft so it was a bit of a challenge to cut, but other than that, I would call it successful.

I stuffed them with a mixture of shredded chicken, yogurt, mustard, cumin, and fresh rosemary. I topped them with feta when I took them out of the oven, although goat cheese would have been better. That is another thing I am craving these days…mom are you reading? The seasonings were perfect, I guess I would cook it longer to further soften the cabbage. Unless there is some method for pre-softening the cabbage I am unaware of. Otherwise, I say make these now!

    Could you blanch the cabbage first? Yes, I am reading….goat cheese, asparagus, symlin, anything else???? Oh yes, huge Easter egg hunt! You would have been proud of my Indian, Mediterranean dinner last night. Everyone really liked it! Looks like a PERFECT day in AR hope it is in Big D!!!
