Today is my good friend Amy’s birthday. We went to school in Florida. Slum City as some refer to it. We share a love of Special K cereals. Too bad Special K is annoyingly expensive and thus a rare, rare purchase. However, Amy and I may have created the ultimate healthy dessert: fruit parfait with vanilla yogurt, fresh fruit, and cereal (usually the yogurt bunch or almond crunch kind).
We don’t mess around when it comes to dessert, as you can tell in the picture. We like things BIG. It is a birthday after all. I made this one for her birthday a few years ago, back in the days of Florida tan-ness. As you can see, it has basically every good fruit involved: blueberries, strawberries, grapes, bananas. Layered in between is yogurt and sprinklings of cereal.
And this is what happens when you give 5 girls a huge bowl of birthday parfait. We don’t bother with bowls or individual servings. No no, we just eat communally right out of the bowl until its all gone…maybe even with extra big spoons. At least it was healthy, right?
