This afternoon I remembered I had signed up to take snacks at church. My sis and bro-in law are in town and tomorrow we have fun things planned, like the Nasher Sculpture Garden and Dallas Blooms, so I knew there wouldn’t be time to be baking in the kitchen for long. I baked healthy apple muffins. We also had some fruit from the farmers market-sweet mangos, fresh blueberries and baby mandarin oranges that looked just like chinese lanterns.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1 cup unsweetened applesauce
1/4 cup dark brown sugar, packed
1/4 cup honey 1 large egg, lightly beaten
1 cup (8 ounces) almond milk, 3 tablespoons lemon juice
2 large apples, roughly chopped
Whisk dry ingredients in a bowl; beat wet ingredients together. Mix wet into dry and pour into greased muffin cups. Bake at 450 degrees for 10 minutes, lower heat to 400 and bake for 7 more minutes. Toothpick inserted into the middle should come out clean. Enjoy!
