This afternoon I remembered I had signed up to take snacks at church. My sis and bro-in law are in town and tomorrow we have fun things planned, like the Nasher Sculpture Garden and Dallas Blooms, so I knew there wouldn’t be time to be baking in the kitchen for long. I baked healthy apple muffins. We also had some fruit from the farmers market-sweet mangos, fresh blueberries and baby mandarin oranges that looked just like chinese lanterns.                                                              fresh farmers market fruit

Apple Muffins:

Yield: They said 12, I got 18

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1 cup unsweetened applesauce

1/4 cup dark brown sugar, packed
1/4 cup honey                                                                                                                                     1 large egg, lightly beaten
1 cup (8 ounces) almond milk, 3 tablespoons lemon juice
2 large apples, roughly chopped

Whisk dry ingredients in a bowl; beat wet ingredients together. Mix wet into dry and pour into greased muffin cups. Bake at 450 degrees for 10 minutes, lower heat to 400 and bake for 7 more minutes. Toothpick inserted into the middle should come out clean. Enjoy!

    The Dallas Museum of Art is quite a place, if you’re looking for more fun things to do. There’s also a Ripley’s Believe or Not place around there too. Not to mention Six Flags, Hurricane Harbor, the Ballpark in Arlington, American Airlines Center, Cowboys Stadium…the list is endless. Let me know if you ever need more ideas!

    We went to the Nasher Sculpture museum because we had free tickets. So much in Dallas costs money…boo. So if you have any FREE ideas, let me know!

      I’m pretty sure wandering around downtown is free. There’s this really neat little plaza next to an office building with fountains and lights. Nothing too flashy, but good for a photo-op. I wanna say it’s around the southeastern corner of downtown. There’s a cool little TGI Fridays in the middle of everything and you can sit outside and watch the action unfold. They serve meat though…
